recipes from the absent blogger

dinner the past two nights has been awesome. i thought i would share what i made :)

collard greens, sweet potato and lentil curry:

i added cauliflower to the recipe. also, i used diced tomatoes instead of crushed. one of the cans i used was fire roasted. don't know if it really added anything, but just to let you know. i didn't add raisins or walnuts (forgot and allergic). lastly, the sweet potatoes didn't all completely cook. the recipe doesn't give a specific time for how long to cook the potatoes. i recommend cooking them a bit beforehand. we ended up eating it with partially cooked pieces because it was taking too damn long. :) also, don't let the message of the website deter you. i found this recipe randomly. afterwards, i was looking at the rest of the page and saw some interesting notes at the bottom. hmm, oh well, the food was good.

easy creamy tomato soup:

holy cow, was this buttery goodness. we had this along with a loaf of bread anna made. hot fresh bread, slices of cheese, and tomato soup on a windy, rainy night equals a very happy girl. i used a purple onion because that's what we had and i added some garlic. i used crushed tomatoes for this recipe because really, why used diced and puree it if you can just used crushed. i did add one fresh diced tomato for a little extra substance. also, i used 2 cups of whole milk and 1 cup of 1%. man, this soups was so awesome i think i'm going to always make it instead of buying it in a can.

there you go readers. i have not forgotten you. i'm just busy stuffing myself for the winter ;)

  1. Ahh!! You made my mouth water. We've recently become huge fans of collard greens from our farmers' market, so I'll definitely be trying that curry soon. Thanks for sharing, and happy stuffing! :)
